Vegan Chickpea Mango Ceviche

It is a go-to in our kitchen and I hope you will get to try it out!

Serves 2-4 people

Ingredients:

  • 1 cucumber, chopped
  • 1 mango, diced
  • 1/2 red pepper, diced
  • 200 gr chickpeas ( cooked)
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 bunch cilantro
  • 2 lemons
  • great quality olive oil
  • salt to taste

Directions:

  1. Preheat the oven
  2. Have chickpeas ready to use
  3. Combine chickpeas with salt, cumin, smoked paprika, and olive oil. 
  4. Bake chickpeas for 8-10 min
  5. Prepare the rest of ingredients and once chickpeas are cool off to the bowl.
