Serves 2-4 people
Ingredients:
- 1 cucumber, chopped
- 1 mango, diced
- 1/2 red pepper, diced
- 200 gr chickpeas ( cooked)
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 bunch cilantro
- 2 lemons
- great quality olive oil
- salt to taste
Directions:
- Preheat the oven
- Have chickpeas ready to use
- Combine chickpeas with salt, cumin, smoked paprika, and olive oil.
- Bake chickpeas for 8-10 min
- Prepare the rest of ingredients and once chickpeas are cool off to the bowl.
