What it is
Kombucha is a fermented drink made form sweetened tea with a history going back thousands of years through China, Japan and Tibet, although its exact origin is unknown. It has recently become hugely popular in Europe.
How it’s made
Made from sweetened tea and a culture called a scoby (symbiotic culture of bacteria and yeasts), the bacteria and yeasts ferment the sugar, which is what gives kombucha its distinctive sour taste.
