Well this is a salad that is really basic and makes a great summer lunch or side dish. 🤍

Try it and let us know. Please try to use a good quality of olive oil and the adaptogen maca as that will change your game! Olive oil when in good quality can bring up natural antioxidants, Vitamin E, and phytosterols!

Ingredients for 2 as a main dish:
1/2 C lentilles, we used green lentils but works great with beluga lentils too.
1 cucumber, cut in small pieces
5-6 cherry tomatoes
3-4 lettuce leaves
1 Tbls fresh mint
1 tsp dry mint
Salt/peper
1.2 C home made croutons

Dressing: 4 Tbls extra virgin olive oil, 1/2 avocado, 1 Tbls maca powder, 1 Tbls apple cider vinegar, lemon juice , salt and pepper.
